Guac

 2 Ripe avocados
 1 Jalapeno - deseeded and chopped
 1 Small shallot or small sweet onion chopped
 2 Cloves garlic minced
 6 Cherry tomatoes
 1 Bunch cilantro
 1 Lime cut into wedges
 1 Salt will be added to taste

Cut the avocado in half and scoop the contents into bowl. Save the seed.

Finely chop the shallot and garlic and add to bowl

Chop the cherry tomatoes and add to bowl

Deseed the jalapeno with a spoon and then chop. Add to the bowl.

Chop a handful of cilantro and add to the bowl

Stir and taste this mixture before adding the lime and the salt. You’re going to add both of those gradually, tasting as you go. Start by squeezing just a small wedge of lime into guac and taste. Then add a pinch of salt and taste. Repeat the process. Notice how the salt causes the other flavors to stand out more. Notice how the lime freshens the flavors. I always add the seed back to the bowl to see if helps keep the color. But the best solution is just to dig in and eat the guac.
