Instant Pot Chicken Sweet Potato Stew

This meal is perfect when you need some comfort food and as a bonus it’s nourishing and delicious. Chicken thighs, sweet potatoes, carrots, onions, garlic, jalapenos and collards combine with a rich broth of coconut milk, almond butter, chicken broth, cumin, cinnamon, coriander and sweet smoky paprika. And since it's in the Instant Pot we'll add easy to the bargain. Enjoy and be safe!

 2 lbs Boneless Skinless Chicken Thighs - Cut Into Bite Sized Pieces
 1 Bunch Collards - Stems Removed and Leaves Rough Chopped
 2 Sweet Potatoes - Diced
 1 Medium Onion - Diced
 3 Cloves of Garlic - Diced
 1 Jalapeno - Seeds and Stem Removed - Diced
 2 Carrots- Peeled and Diced
 6 oz Can of Tomato Paste
 A Few Healthy Squirts of Fish Sauce
 1 tsp Salt
 1 cup Full Fat Coconut Milk
 ¼ cup Almond Butter
 2 tsp Sweet Smoked Paprika
 1 tsp Cumin - Ground
 1 tsp Coriander - Ground
 1 tsp Cinnamon - Preferably Ceylon
 1 tsp Course Ground Pepper
 Lime Wedges for Garnish
 Cilantro for Garnish
 Avocado for Garnish
 1 qt Chicken Broth - I Used Most of a Quart

This one is easy. We're not browning anything. We're just cutting everything up and loading it in the Instant Pot.

You're going to give it a good stir and then seal the top of the Instant Pot and set it to Pressure Cook and for 18 minutes.

When it's finished cooking let it sit for 5 minutes and then CAREFULLY do a quick release.

Garnish with lime juice, cilantro and avocado slice.
