Roasted Salmon with Veggies

Quick and delicious! Salmon, sweet potatoes and green beans all in under 30 minutes!

 2 -3 Pound Salmon Filet - I Used Farmed Salmon From Norway - But Wild Caught Works Great too!
 1 Large Sweet Potato - Sliced
 2 Shallots - Sliced Thin
 1 lb Green Beans - I Used Haricot Verts
 1 -2 Lemons - Sliced
 EVOO to Coat the Ingredients
 Salt and Pepper to Taste

This one is super simple. Preheat the oven to 450 degrees.

While the oven is preheating we're going to slice the salmon into 2-3" inch slices, cut the sweet potato into thin coins and rinse and dry the green beans and thinly slice the shallots and coat everything with a little EVOO and lightly salt and pepper.

When the oven gets to temp, add the sweet potatoes and the green beans to the sheet tray and put in the oven and set a timer for 10 minutes.

When the timer is up, add the salmon and shallots and top it all with the lemon slices and a squeeze of lemon juice. Salt and Pepper the salmon.

Set the timer for 12-13 minutes. I'm looking for 130 degrees.
