Years ago, I watched someone open an almost empty fridge and pull together a few ingredients and they made a fantastic tasting meal.

I was both impressed and inspired.

I wanted to learn how to do that – how to coax the flavor out of ingredients without a big production or a major hassle.

That’s what Fearless Cooking is all about.

It’s about fixing fantastic tasting meals that don’t require you to be a chef or some type of culinary wizard with a commercial kitchen.

You’ll learn how to cook intuitively.

You’ll learn some flavor combinations that just naturally work well together and you’ll figure out how to expand on that so you don’t get stuck in the dreaded culinary rut.

You’ll figure out if a particular roast would be better cooked medium rare or slowly braised until it’s fork tender.

You’ll know how to add acid to a dish to brighten the flavors and some options to use for layering acidity when cooking.

You’ll look at salt (and pretty much anything else edible) with a new-found appreciation.

And this isn’t boring, tasteless stuff that you’ve got to choke down.

My approach… and why this is different than any other cooking classes out there

I used to be a carb junky.

Every meal had some type of bread, pasta, or grains. Always whole grain, but I was like a poster child for “heart healthy whole grains”.

That was until I found out that I had heart disease.

And I was gaining weight and was pretty miserable.

I researched the Paleo/Primal approach to eating and it made sense to me.

That was over 5 years and 20 pounds ago, so you could say that I’m a fan.

So much so that I became a certified Primal Health Coach. Don’t worry, I’m not going to make you do squats before you sauté mushrooms.

For years I wanted to learn how to open up my fridge and quickly build a meal that could rival or surpass most restaurants.

I wanted to learn how to do that without going to culinary school and without spending a fortune on food.

And I wanted to learn how to do that with fresh, healthy ingredients and in a way that was accessible to someone in an average kitchen with little to no kitchen experience as well as make it interesting for the more accomplished cook.

You will see the approach that I’ve used to shed 20 pounds and feel better than I have in years.

We’ll also explore some of the differences between Paleo, Primal and Keto and figure out if there’s any benefit or if it’s all just hype.

But, most importantly, my approach to making cooking a pleasure instead of a chore to be endured.

I started Fearless Cooking because I wanted to encourage people to cook more of their meals instead of resorting to fast food or eating their meals in restaurants.

This is probably as good a time as any to say that I’m a Primal Health Coach, but I’m not a doctor or a dietician.

What I cook and what I talk about on Fearless Cooking is not medical advice and is not intended to treat, diagnose, prevent or cure a disease. That’s the domain of doctors and drugs – I’ll leave that to them.

What I’m talking about is my own experience and information that I’ve gained in my pursuit of getting healthier and finding a diet and a lifestyle that works for me.

This is one of those disclaimers to keep the lawyers happy. I hope you choose to cook along with me and if you do, please stay safe. I don’t want someone cutting a fingertip off or burning themselves because they were distracted or in a hurry.

For Sous Vide starters – how about a perfectly cooked medium rare steak? Or a perfectly cooked chicken breast or pork chop? Yep – Sous Vide.

How about fork tender roast in under an hour that would be an InstantPot specialty? Or bone broth in an hour? And don’t think that bone broth is just a health food staple. It’s also the secret weapon for incredible soups, stews and sauces.

And speaking of incredible soups and stews – yep – InstantPot.

We’ll explore why all roasts aren’t the same. Some you’ll cook medium rare and some you’ll braise for hours. I choked down a lot of dry, stringy roast until I figured that out.

We’ll also explore out some basic cooking methods that include sautéing, frying, roasting, braising, stewing, poaching and of course grilling.

And speaking of grilling – we’ll figure out some quick meal options on the grill and how to easily cook your entire meal on the grill.

So who exactly is Fearless Cooking for?

Fearless Cooking is for people who want to up their cooking game.

It’s for the beginner, but it’s also for the person who cooks all the time, but wants to expand his/her game.

That’s what it’s doing for me. It’s forcing me to learn new approaches, new flavor profiles, new hacks, so that I can bring those back to you.

Fearless Cooking is also about the community.

I’m going to continually work on upping my game to keep it interesting for you, but I’m also looking forward to the inspiration and motivation that comes from the group.

I’ve created a closed Facebook group to facilitate that ongoing interaction, support, and accountability.
