Green Bean Casserole & Fried Shallots
This is sooo much better than that cream of mushroom soup stuff.
You’ll need to blanch the green beans ahead of class. You’re going to get a large pot of heavily salted (2 tbsp of salt) water to a rolling boil and the slowly add the green beans. Let them return to a boil and pull them after 5 minutes and place them in a bowl filled with water and ice cubes. We want to stop the cooking process.
You can cut the shallots with a chef’s knife but this works best if you have a mandoline. That way you can control the thickness. I bought a cut proof safety glove from Amazon for $9 that I use when I use the mandoline so I don’t have to worry about losing a finger tip.
You’ll need a wire strainer, a heat proof bowl, a baking sheet, paper towels, and 2 large skillets (not non-stick).
Just blanch and ice bath the green beans ahead of class and we’ll do everything else during class.
