Shrimp Stir Fry with Snow Peas & Mushrooms

Quick, tasty and full of veggies – I love how quick this stuff cooks.

You need either a wok or a large skillet.

Stir fries go quick so you want to have all of your ingredients prepped ahead of time. So slice your mushrooms and onions, chop your bell pepper, jalapeno, garlic and ginger and devein and remove the shells from your shrimp.

I’d also suggest having your sauce ingredients measured and handy. We’ll be adding avocado or coconut oil as we need it

I’m buying wild-caught shrimp unless I know something about where the shrimp are farmed. And if I’m not buying shrimp that are already deveined then I’m buying large or jumbo shrimp so there are fewer to clean.

Prep

Stir fries go quick so you want to have all of your ingredients prepped ahead of time. So slice your mushrooms and onions, chop your bell pepper, jalapeno, garlic and ginger and devein and remove the shells from your shrimp.

I'd also suggest having your sauce ingredients measured and handy. We'll be adding avocado or coconut oil as we need it. 

Ingredients

 1 lb Shelled & Deveined Shrimp - Large or Jumbo - My Preference Are Wild Caught Not Farmed
 ½ -3/4 Pound Snow Peas
 ½ cup Mushrooms - I Prefer Shiitakes - Sliced Thin
 1 Jalapeno - Seeds & Stem Removed - Chopped
 2 -3 Green Onions - Trimmed & Sliced
 2 Cloves Garlic - Chopped
 1 ½ Inch Piece of Ginger - Skin Removed and Minced
 1 Red, Orange, or Yellow Bell Pepper - Stem & Seeds Removed - Chopped
 ¼ cup Avocado Oil or Coconut Oil
 ¼ cup White Wine
 2 tbsp Fish Sauce
 2 tbsp Tamari Sauce
 ½ - 1 Tsp. Red Pepper Flake - Optional
 1 Lime - Juiced
 1 tbsp Honey
 SERVE WITH CAULIFLOWER RICE or WHITE RICE

Devein & remove shells from shrimp. You can also buy it already deveined. I buy the largest shrimp they have so I have fewer to devein.

Having all of your ingredients prepped before you start cooking is extra important when stir frying because things cook very quickly. So prep all your veggies and have your sauce ingredients ready.

We're going to add the avocado or coconut oil as we need it.

You want to make sure that your wok or skillet is hot to ensure that you're cooking your ingredients instead of steaming them.

Don't over-crowd your wok - this will help maintain a high heat.

We'll cook the shrimp first and we'll add a tablespoon of oil and cook the shrimp in batches. I salt ingredients as i add them.

When the shrimp start to turn pink we'll remove them to our holding bowl. Once we get all of our ingredients cooked, we'll make our sauce and then add everyone back into the pool.

We'll cook the onions, the ginger, the bell pepper and the garlic - put the bell pepper in first and the garlic in last since the garlic will cook quickly and we don't want it to burn.

We're going to cook the mushrooms next because they'll absorb most if not all of the remaining oil and once they're finished cooking we're going to add the white wine and when it's boiling we'll throw in the snow peas. As soon as the get just a little tender, we'll remove them to the holding bowl.

We'll add the fish sauce, the tamari sauce, the lime juice & the honey to any remaining white wine and the red pepper flakes if you're adding them. Stir to combine and then add all of the ingredients back into the wok or the skillet and stir to combine.

This can be served with cauliflower rice, white rice or your favorite noodle. I'll have a sheet pan of cauliflower rice in the oven cooking while we're preparing this.
