Steak with Mushrooms, Snow Peas and Peppers
It was time to show beef a little love. Grass fed if you can get it. Sirloin works great – we’re only cooking it for a couple of minutes. If you’re not a snow pea fan, asparagus would also work great.
You’ll need a heavy skillet (cast iron, stainless steel or carbon steel), a rimmed sheet tray and a bowl to hold the batches of food in after they quick cook. We’re going to make a pan sauce to tie it all together.
Go ahead and trim and slice the mushrooms, chop the bell pepper, mince the garlic and the shallot and salt and pepper the steak. We’ll trim and cut the steak during class.
