Big Ass Salad With Turmeric Almond Butter Dressing
This is the first of several meals that we’ll make using part of a rotisserie chicken. Feel free to roast your own, but I chose rotisserie chicken because it’s a time saver. Central Market’s chicken is made with olive oil, garlic, salt and pepper. No funky ingredients.
Feel free to make substitutions. The salad below has carrots, but I swapped strawberries for the carrots and decided that was the way to go.
I think you’ll be making the turmeric almond butter dressing again and again.
No need to prep for this one. You’ll need a blender for the dressing.
See you Sunday!
Enjoy!

Ingredients
This is one of several meals that we'll make using rotisserie chicken
We're going to rough chop the dates and finely mince the garlic and the ginger.
Add all of the salad dressing ingredients to the blender and let it work it's magic. I used blackstrap molasses, but you can also use regular molasses. If the dressing is too thick add another tablespoon of water.
The beauty of a big ass salad is that it's your canvas and you can paint a meal tailored to your preference. The ingredients that I listed spoke to me. Feel free to have a conversation with your ingredients.
Enjoy!
