
Big Ass Salad Using Rotisserie Chicken and an Almond Butter Turmeric Dressing

Ingredients
BELOW ARE THE SALAD DRESSING INGREDIENTS
1 cup Water
½ cup Fresh Squeezed Lemon Juice - About 2 1/2 lemons
⅓ cup Almond Butter
2 tbsp Grated or Minced Ginger
1 tbsp White Miso Paste
1 tbsp Molasses - I Used Blackstrap But Regular Molasses Also Works
2 tsp Ground Turmeric
Zest From 1 Lemon
2 Cloves Garlic - Minced
BELOW ARE SALAD INGREDIENTS
Your Choice Of Salad Greens - I'm Using Baby Spinach -
1 Red Bell Pepper - Seeds & Stem Removed - Sliced & Chopped
1 Handful of Snow Peas
As Much Chicken As You Want From Rotisserie Chicken
2 Radishes - Sliced Thin
½ Cucumber - Sliced Thin
Handful of Strawberries - Cored and Sliced
1 Avocado - Sliced
1 Handful of Sliced Almonds
1 Sprinkle of Feta or Goat Cheese

This is one of several meals that we'll make using rotisserie chicken

We're going to rough chop the dates and finely mince the garlic and the ginger.

Add all of the salad dressing ingredients to the blender and let it work it's magic. I used blackstrap molasses, but you can also use regular molasses. If the dressing is too thick add another tablespoon of water.
