
I love fried okra but this is my new favorite way to fix and eat okra!
Ingredients
1 lb fresh okra de-stemmed and sliced 1/2-3/4 inches
1 medium onion chopped
2 cloves garlic minced
1 can full fat coconut milk
1 can fire roasted diced tomatoes
2 tbsp coconut curry powder
1 tbsp coconut oil, bacon grease or pastured lard
1 cup chicken broth
1 lime cut into wedges for garnish
1 bunch cilantro chopped for garnish

heat coconut oil, bacon grease or pastured lard in heavy bottomed sauce pan over medium- medium high heat

add onions and stir for a couple of minutes and then add garlic, okra and curry and stir occasionally for 2-5 minutes

add coconut milk, tomatoes and chicken broth and stir. Cover pot and reduce heat to low and cook for 30 minutes stirring occasionally

garnish each serving with cilantro leaves and squeeze of lime
